Zucchini Bread

This Zucchini Bread is SO DANG GOOD.  Pam Godfrey brought us some over when I was in high school and I have never forgotten it.  It's not a health food, it has a ton of sugar and oil it, which is probably why it tastes so good.  Oh well.   I did put in a lot less sugar this last time I made it, and it was still good.

 "Rich Zucchini Bread"
3 eggs                                 1 tsp soda
1 c. cooking oil                     1/4 tsp baking powder
21/2 c. sugar                        1 tsp cinnamon
3 tsp vanilla                          2 c. zucchini grated
3 c. flour                              1 c. nuts, chopped (opt)
1 tsp salt
 
Combine eggs, oil, sugar, and vanilla.  Beat thoroughly.  Add dry ingredients and blend well.  Stir in zucchini and nuts. Bake in 2 loaf pans or 10-cup bundt pan at 325 for 60-70 minutes.

Teriyaki Chicken

Rach gave me this recipe and it's SO good.  I've already called her and asked her for it twice, so I figure if I put it on here I can look it up next time I lose it...... :)


1/4 C soy sauce
1/2 t. ginger
1/4 t garlic powder
1/4 C brown sugar
1 T honey
1 t sesame oil

Put Chicken and a little oil/butter in the crock pot and pour this over.  When the chicken is done, take it our and shred it, and strain the sauce.  We ate it with steamed veggies and rice.
