Chicken Cordon Blue

Jed and I made this Yesterday and it was pretty good. We didn't have a recipe so if you find one that tastes better let me know.

Heat oven to 350 degrees
A thawed or raw chicken breast for each person
1/4c shredded/sliced swiss cheese(we used about 1/4c for two chicken breasts and thought it needed more)
1/4c to 1/8c Diced ham
1/2c Corn flake crumbs (add whatever seasoning sound good to the crumbs we tried a little bit of italian)
Salt and Pepper
2T butter or margarine

Take a sharp serated knife and poke a hole in middle of the chicken breast, then work the knife through the chicken from top to bottom without making the hole too much bigger. Try not to make other holes. I held it in my hand when doing this and it seemed to work better. Then stuff the swiss cheese and diced ham into the hole and try to work it into where you cut it. Stuff as much cheese and ham that you want. Then melt the butter or margarine on a plate in the microwave and coat the chicken in it and then bread it with the corn flakes. Salt and pepper. Put chicken on a greased non stick pan and put in oven for 35-40 minutes. We had this with one of those side dish packets, we used chicken and broccoli rice packets. We enjoyed it alot, hope you do too!
