Danny teases me about never being able to follow a recipe all the way. I have cooking ADD or something because I always have to add something, or leave something out, or add extra of an ingredient, or use less of another.
So my mom was not having the best day and so Danny (yes, he is romantic AND thoughtful) suggested we make something for her. Of course, he said this when we were by Kathy so she starts naming every meal and treat she can think of to make for her. Since my mom has Celiac disease it limits the yummy baked goods we could bring her. We decided on no-bake cookies.
You may be thinking, "With a recipe so simple an already delicious, there is nothing you could really change to make it better." Well sadly, you would be in sad denial if you believe that.
My mom and I share two loves: dark chocolate and coconut. She also loves marshmallows, I am not a huge fan but I aim to please.
So instead of regular cocoa powder, we used dark cocoa powder (a-maze-ing). We added shredded coconut and some mini-marshmallows. Let me tell you- THEY WERE DELICIOUS! Danny and I ate two just on the way to my parents' house to drop them off. Then Danny had to take another two back with us to eat later.
Anyway, if you are ever making no bake cookies you should try using at least dark cocoa and coconut!
*we used a 1:3 ratio of coconut to oats, but do what you feel is right :)
These sound amazing! I ALWAYS have dark cocoa, but I think I may have to go to the store for the coconut, or you know I would be making these tonight.
ReplyDeleteMMMM...These do sound really good. Jed and I tried to make no-bake cookies last week but we realized that we the old school oatmeal and not the instant, he suggested using some instant maple and brown sugar packets instead..needless to say they ended up in the garbage.
ReplyDeleteI've always done the coconut, I'm a big fan! But haven't tried the dark cocoa, great idea. Glen is a huge fan of the dark stuff, so I'll definitely have to use this to my advantage!
